Ingredients
For the Sweet Potatoes:
- 2 small (or 1 large) sweet potato, peeled and cubed
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp salt
- Olive oil spray
For the Bowls:
- 1/2 pound ground beef
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp paprika
- 1/4 tsp chili flakes
- 1/2 tsp salt
- 1 cup cottage cheese
- 1 avocado, cubed
- 1/2 tbsp hot honey
- Chili flakes, to taste
Instructions
- Prepare The Sweet Potatoes: Peel and cut the sweet potatoes into small cubes. Season them with 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, and 1/4 teaspoon salt. Lightly spray with olive oil to help them crisp up. Cook in the air fryer at 375°F (190°C) for 15 minutes, or until the sweet potatoes are golden and tender.
- Cook The Ground Beef: Heat a skillet over medium-high heat. Add the ground beef along with 1 teaspoon onion powder, 1/2 teaspoon garlic powder, 1 teaspoon paprika, 1/4 teaspoon chili flakes, and 1/2 teaspoon salt. Cook, stirring occasionally, until the beef is fully cooked and slightly browned.
- Assemble The Bowls: Divide the cooked sweet potatoes and ground beef evenly between two bowls. Add half of the cubed avocado to each bowl. Top each with 1/2 cup of cottage cheese. Finally, drizzle each bowl with hot honey and sprinkle chili flakes to taste for added heat.
Notes
- Use an air fryer for perfectly crispy sweet potatoes without excess oil.
- If you don’t have hot honey, mix honey with a pinch of chili flakes as a substitute.
- Feel free to adjust the chili flakes amount based on your spice preference.
- For a leaner option, use ground turkey or chicken instead of beef.
- This recipe can be easily doubled to serve more people.
