Description

A delicious and easy-to-make Garlic Parmesan Chicken and Potatoes recipe combining crispy air-fried potatoes with tender, flavorful chicken cooked in butter and seasoned with classic spices. Finished with a layer of melted mozzarella cheese and tangy Buffalo Wild Wings Garlic Parmesan Sauce for a comforting and savory meal perfect for any occasion.

Ingredients

Chicken

  • 1 lb chicken breasts, cut into cubes
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1-2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (enough to coat the chicken)

Potatoes

  • 4-5 small to medium russet potatoes, washed, peeled, and cut into small cubes
  • Olive oil (enough to coat potatoes)
  • Salt (to taste)
  • Pepper (to taste)
  • Garlic powder (to taste)
  • Paprika (to taste)

Finishing

  • 1 cup shredded mozzarella cheese
  • Dried parsley (optional, for garnish)
  • Additional Buffalo Wild Wings Garlic Parmesan Sauce (optional, for drizzling)

Instructions

  1. Prepare the potatoes: Wash, peel, and cut the russet potatoes into small cubes to ensure even cooking.
  2. Season the potatoes: Toss the cubed potatoes with olive oil, salt, pepper, garlic powder, and paprika until well coated with the oil and seasonings.
  3. Air fry the potatoes: Place the seasoned potatoes in the air fryer basket and cook at 400°F (204°C) for about 25 minutes, shaking or stirring them a couple of times during cooking to promote even crisping.
  4. Prepare the chicken: While the potatoes cook, cut the chicken breasts into cubes if not already done.
  5. Cook the chicken: Heat 2 tablespoons of butter in a skillet over medium-high heat. Add the chicken cubes and cook until done, seasoning with salt, pepper, paprika, onion powder, and Italian seasoning.
  6. Add garlic and sauce to chicken: Once chicken is cooked through, add minced garlic to the skillet followed by enough Buffalo Wild Wings Garlic Parmesan Sauce to coat the chicken thoroughly. Stir to combine the flavors.
  7. Combine potatoes and chicken: Add the crispy air-fried potatoes to the skillet with the chicken and stir well to mix everything evenly.
  8. Add cheese and melt: Sprinkle shredded mozzarella cheese on top of the mixture and place the skillet under the oven broiler for a few minutes until the cheese melts and bubbles. Alternatively, cover with a lid on the stove and let the cheese melt.
  9. Garnish and serve: Optionally, sprinkle dried parsley and drizzle a little more Garlic Parmesan Sauce on top if desired. Serve immediately and enjoy!

Notes

  • You can adjust seasoning amounts for the potatoes according to your taste preference since exact measurements are flexible.
  • If you don't have an air fryer, roast the potatoes in a conventional oven at 400°F for about 30-35 minutes, stirring occasionally until crispy.
  • Use fresh minced garlic for the best flavor when adding it to the cooked chicken.
  • Broiling the cheese gives a nice melted crust, but alternatively, covering with a lid on the stove to melt is a good no-broiler option.
  • Buffalo Wild Wings Garlic Parmesan Sauce adds a tangy, savory flavor; you can substitute with any good quality garlic parmesan sauce if unavailable.
