Ingredients
Potatoes
- 2 lb / 1 kg potatoes, peeled (4 large potatoes)
Seasoning & Oil
- 3 tbsp olive oil
- 1 1/2 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder (or substitute with additional garlic powder)
- 1 tsp salt
- 1/2 tsp pepper
Dipping Sauces
- Sour cream
- Sweet chili sauce
- Optional: Ketchup, tomato sauce, aioli, mayo, yogurt, BBQ sauce, relish
Instructions
- Preheat the oven: Set your oven to 220°C (430°F) or 200°C (390°F) if using a fan/convection oven to ensure it’s hot enough for crispy wedges.
- Mix the seasoning: Combine paprika, garlic powder, onion powder, salt, and pepper in a small bowl to create a balanced spice mix for the potatoes.
- Prepare the potatoes: Cut each peeled potato in half lengthwise, then slice each half into 4 wedges for large potatoes (or 6 wedges if small/medium). This creates the classic wedge shape.
- Toss with oil and seasoning: Place the wedges into a large bowl, drizzle evenly with olive oil, then sprinkle the seasoning mixture over them. Toss thoroughly with your hands to coat all wedges.
- Arrange on baking tray: Lay the wedges out on a baking tray in a single layer, making sure the cut sides lie flat on the tray to maximize crispiness.
- Bake: Place the tray in the oven and bake for 35 to 45 minutes. Halfway through, turn the wedges once so they brown evenly on all sides until they are dark golden and crispy.
- Serve immediately: Remove from the oven and serve the wedges hot for the best texture and flavor.
- Add dipping sauces: Traditionally served with sour cream and sweet chili sauce; however, you can also enjoy them with ketchup, tomato sauce, aioli, mayo, yogurt, BBQ sauce, or relish as alternatives.
Notes
- For smaller potatoes, cutting into 6 wedges is sufficient, while larger potatoes yield 8 wedges each.
- Ensure wedges are spaced out on the tray and not overcrowded to promote crisp baking.
- Turning the wedges halfway through baking ensures even browning and crispiness.
- Adjust seasoning amounts based on taste preference or consider adding your favorite herbs for extra flavor.
- Dipping sauces can be customized; the classic Australian pairing is sour cream with sweet chili sauce.
